When you’re getting ready to start The Whole30, make sure to buy a lot of eggs. You’ll need them for the homemade mayo, egg salad, and breakfast. Seriously, most of the suggested breakfasts in the first week meal plan are leftovers from the previous night’s dinner topped with a fried egg!
Though snacking isn’t necessarily encouraged, they mention having some hard-boiled eggs on hand for quick between-meal bites. I’m not big on plain hard-boiled eggs, but I love, love, love deviled eggs. I also needed something to eat in the morning before workouts, because even though I prefer hitting the gym on an empty stomach, I know that’s not ideal. Maybe deviled eggs seem like a weird thing to eat first thing in the morning, but they’re the perfect solution for me, especially during the Whole30.
I decided not to make traditional deviled eggs. A jar of capers was hanging out in my fridge, and I put those in just about everything…Sometimes I just eat a few right out of the jar.
I also needed something to cut through the richness of the yolks and mayo and the salt of the capers. Lemon was too tart, but red wine vinegar seemed just right.
I’m pretty much in love with this version of deviled eggs. They’d be a great addition to a Sunday football party or any get-together. Just be warned…You’ll find yourself grabbing one every time you walk by the fridge.
Whole30 Deviled Eggs
8 hard-boiled eggs, cut into halves
1/4 cup homemade mayo (recipe herehttp://whole30.com/2014/08/mayo-ghee-sauces/here)
2 teaspoons Whole30 compliant mustard
1 teaspoon (or more, to taste) Whole30 compliant red wine vinegar
1 tablespoon chopped capers
1-2 teaspoons Whole30 compliant nutritional yeast
Black pepper to taste
Paprika and fresh chopped parsley for garnish
Gently scoop the yolks out of the whites and add them to a bowl. Set the whites aside. Add all remaining ingredients and mix well. If your mixture seems a bit dry, add more mayo or mustard and mix again. Check for seasoning and adjust as needed.
Scoop mixture into a piping bag fitted with a 1M tip (or use a zip-top bag and cut the corner to pipe) and fill each egg white. Sprinkle with paprika and chopped parsley.
Makes 16 deviled eggs
